Notre Vignoble et Philosophie

Nos vignobles

Notre premier parcelle viticole – le vignoble Hourcat Sud Cabernet Franc – a été acheté au mi-2009 avec la gestion viticole commerciale démarrant en janvier 2010.

Ce vignoble comprend deux sections La plus grande section supérieure de 0,45 ha à l’est avec +/- 1 000 têtes de vignes de Cabernet Franc maintenant âgées de 30 ans, qui fournit le fruit de nos vins <B1ockOne> uniques en monocépage de Cabernet Franc. Surplombé par l’église Saint-Saturnin du XIIe siècle de l’ouest, c’est ce terrain qui a enflammé la mission et la passion du projet Paradise Rescued, pour protéger cette belle partie rurale du village du surdéveloppement.

À l’extrémité ouest de Hourcat Sud, il y a une section de vignes mixtes actuellement plantées avec des rangs courtes de Sauvignon Blanc et des différents raisins de table. Les fruits de ces vignes sont mis à la disposition de la communauté pour leur usage personnel. Une partie de ce bloc a été arraché en 2016 pour faire place à une extension du vignoble de Cabernet Franc. 300 vignes supplémentaires ont été plantées en 2021.

Le parcelle Hourcat Center a été acheté en septembre 2011 alors qu’il était dans un état très délabré. Au bout sud se trouve une section de vignes de merlot de plus de 55 ans – le soi-disant « Vignes du Merlot », qui a été sauvé avec beaucoup de soin et d’attention afin de former le cœur les assemblages de nos vins BlockTwo Merlot CabFranc.

La plus grande partie nord de ce parcelle, anciennement plantée en vignes de Sémillon, n’était plus récupérable et a dû être arraché. En 2014, il a été replanté en Merlot avec des rangs de vignes plantées à proximité ensemble avec quelques rangs de Cabernet Franc derrière le chai.

Notre philosophie viticole

At the point of purchase and start of Paradise Rescued management, our vineyards were not in a good
condition. From day one, an organic viticultural strategy has been adopted – no synthetic herbicide pesticide insecticide chemicals have been used. After a period of official conversion, the complete Paradise Rescued vineyard  was certified organic by ECOCert in 2016. Through a programme of annual auditing, we have maintained that standard ever since.

Our organic philosophy is based on two reasons. Firstly, given our sustainability commitment to our community families and neighbours who live close to the vineyards, the use of synthetic chemicals is not acceptable. Secondly, we have sought to regain the health of the soil, provide a more balanced ecosytem and fully healthy organic vineyard as this is reflected in our wines.

As far as practical as possible, our vineyard operations are carried out by hand, minimising the impacts of heavy mechanical equipment on the land and bringing the maximum personal care and attention possible to each vine.

Our philosophy to produce excellent hand crafted fine wines begins in the vineyard. Our simple approach:-

Great wines are made from excellent fruit produced on healthy vines growing in active living healthy soil. As our organic viticulture journey has evolved from the start, the emphasis has continued to focus on the vineyard but more and more on the soil.

The attention to detail required in great winemaking will always remain a key skill and knowledge for our our winery team. Increasing effort is now being given to looking at our soil management practices as our 2030 Vision puts the emphasis on Regenerative Organic Viticulture to increase the biodiversity in our vineyards and the increase the potential of our soil to sequester greater carbon and provide an even healthier ecosystem.
